Buttermilk Pancakes recipe
Nothing is better on a weekend morning than the smell of pancakes cooking on the stove - this recipe for Buttermilk pancakes is lovely, fluffy and incredibly moreish.

Ingredients

125g flour
1/2 teaspoon sugar
1/2 teaspoon salt
1 teaspoon bicarb of soda
3/4 teaspoon baking powder
2 teaspoons melted butter (30g)
1 egg
250ml buttermilk
Butter for frying

Directions

The real secret to this recipe requires some patience...if you have it you will be well rewarded, so follow the recipe to the T.

Sift together all of your dry ingredients, make a well and add the egg, melted butter and buttermilk, stir to a thin creamy texture.

Now cover the bowl with a cloth and leave it to stand for at least1/2 an hour. Go and have a shower, catch up on the news or have a cuppa... but let the mixture be...

When you are ready to cook, check that the batter is not too thick and if need be, add a little more buttermilk.

Heat a heavy based pan to medium and add a little butter, ladle in enough batter to make a 10cm pancake. Let them cook until bubbles begin to pop on the surface which should be about 3 minutes. Turn and brown the other side.

These are fantastic...pile them up, place a generous amount of butter on top and drizzle over some maple syrup, honey or your favorite jam.

Makes 12 10cm pancakes

This was a disaster. Promised my child and husband pancakes for supper. Prepared the mixture to the "T"as soon as I walk into the kitchen, left to stand for 1 hour while homework and bath was done. It was salty and "acidy". Is the quantity of salt correct? And does one use Baking Powder and Bicarb. together? Zoe my dog eats everything and not even Zoe was interested in this contraption.

Hi Vanitha

I checked with the author of the recipe and he had the following to say:
"If they did not rise and were flat and sticky inside, then my best guess is that the baking powder was past its sell by date or that they were cooked on a too high heat that they did not cook through."

I would like to know how much calories is in app 1 pancake, and if you keep the mixture in a fridge overnight will it still be the same?

Hi Karen

Unfortunately I cannot tell you the calorie content for the pancakes as the author of the recipe did not supply this information.

Nor can I answer your second question for sure, but I am quite confident that the mixture will be alright overnight in the fridge.
