Mexican Ceviche

Mexican Ceviche
Anytime snack or salad or treat. Serve with toasted bread, Salticrax or any crispy crackers and also corn chips

Ingredients

2 pounds of shrimp Chopped small (tiny popcorn shrimp) or
1/2 pound of white fish - sea bass fillet for example (dice into 1/2 inch cube)
3 large limes
1 small lemon
1 medium diced fresh tomato
1/2 small white onion, finely chopped
1/2 small green sweet pepper, chopped in cubes
1/2 jalapeno pepper, chopped in cubes (can use chili peppers)
1/2 buch of fresh chopped parsley or chopped cilantro
1 teaspoon of olive oil
salt and pepper to taste
lettuce leaves (to line serving bowls)
avocado cut in slices (optional)
corn chips (optional)

Directions

Mix all together and you are ready to serve. The lime is what cooks the fish. This is served cold.

This is one of my all time favorite dishes for entertaining guests or simply on a hot summer day. Goes well with a braai.
