Spinach Salad

Ingredients

3 slices white bread, crusts removed
300g baby spinach leaves
6 rashers bacon, chopped
50ml pine nuts, toasted
125g button mushrooms,finely sliced
1-2 cloves garlic, crushed
50ml olive oil
15ml balsamic vinegar
salt and pepper

Directions

Cut the bread into cubes and fry in oil until golden and crispy. Drain on paper towel. Rinse the spinach leaves under cold water. Drain well.

Fry the bacon until crispy, then drain on paper towel. Combine the spinach with the croutons, bacon, pine nuts and mushrooms.

Mix garlic, oil and balsamic together and pour over the salad, mixing gently. Sprinkle with salt and freshly ground pepper, and serve immediately.
