The Olivier Salad is a traditional recipe for a Russian salad and is deliciously creamy and filling
Ingredients2 cups Peas2 Large Carrots, sliced 1 Large Potato/or 2 med. 8-10 Pickles 2 cups Hickory Smoked Ham, cubed 3 boiled eggs *OPTIONAL 2 cups corn *optional Pinch of Sea Salt 1 tsp. Ground Black Pepper 3 TBS. Light Mayonnaise DirectionsFill a medium pot with water, turn on to high and add the peeled and sliced potatoes, carrots and the peas & corn.Season the water with salt. Once it has boiled, turn down the heat to medium. If you are using eggs than put them in another pot with water and boil.(put a pinch of salt in the water, the eggs will peel better) While that is boiling, cut the ham into cubes and slice the pickles into thin slices. Once the vegetables are tender and still hold their shape and color, drain and rinse over cold water so the cooling process is faster. When the vegetables are cold enough, see if you need to cut them in smaller pieces and then combine with the ham and pickles. Now is a good time to peel and cut eggs into smaller chunks. Add salt and black pepper, gently stir. Add Mayonnaise and again lightly stir to combine all the ingredients. Place it in a airtight container and in the fridge for 1 hour before serving.
