IngredientsSalsa Salad1/2 Punnet of fresh rosa tomatoes (small sweet Italian tomatoes) sliced 1 Head baby gem lettuce (broken up and leaves seperated and washed) 1 to 2 Green Chillies finely chopped (depending on tasted) 1 Handful coriander (finely chopped) 1/2 Mediterranean cucumber (julienned in matchstick lengths) 15ml Lemon juice 5ml Brown sugar Salt and freshy ground black pepper Guacamole Dressing 1 Avocado (peeled and mashed) 30 ml Lemon juice 30 ml sour cream / Creme freche 2 Green chillies 1 Generous handful coriander 5ml Cayenne pepper DirectionsSalsa SaladCombine sliced tomatoes, sliced green chilli, chopped coriander and season with a bit of lemon juice salt and black pepper. In a serving dish, arrange the lettuce leaves to form a bed upon which the tomato salsa can be arranged. Arrange the Cucumber over and around the tomato salsa, over the bed of lettuce. Season with remaining lemon juice and Salt and Black Pepper. For the dressing, finely chop together the coriander and chilli using a mezzaluna or a chopping knife and board with some of the lemon juice. Add this to the avo, remaining lemon juice, sour cream and cayenne pepper and blend until smooth. Season with salt and freshly ground black pepper. Spoon dollops over Salsa salad and serve as a side salad to lamb wraps / shwarmas, grilled chicken or any hot spicy food. Is really delicious and is a much nice alternative to boring salad. CommentsCan even be had on its own with toasted pita bread as light lunch.Remove cucumber from salsa salad and salsa can be used to layer nachos with cheddar cheese and popped into the oven. Remove from oven and serve with the guacamole. More chillies can be added when using for Nachos to make it spicier and more exciting!
