Chocolate and Oatmeal Mini Cakes recipe
A naughty little recipe for Chocolate and Oatmeal Mini Cakes - the perfect sinful snack.

Ingredients

1 3/4 cups all-purpose flour
2 tbsp. baking powder
1/2 cup Rolled Oats plus 3 Tbs. For sprinkling the muffins
1/2 tbsp. baking soda
2 Tbs. best quality cocoa powder
3/4 cup sugar
1/2 cup semisweet chocolate chips
1 cup milk
1/4 cup vegetable oil plus 2 tbsp. For greasing the muffin pan
1 egg
1 tbsp. pure vanilla extract

Directions

Preheat the oven to 190C

Combine the flour, baking powder, baking soda, cocoa, sugar, chocolate chips and oats into a large bowl.

Pour all the liquid ingredients into a measuring jug.

Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins.

Spoon into the prepared muffin pan. Sprinkle the remaining oats on top and bake for 25 minutes or until the muffins are risen and springy.
