Let your tastebuds do the cha-cha with this yummy recipe for Mexican Veggie Wraps. Included is a guide to making your own tortillas.
IngredientsFor the tortillas:750 ml cake flour 5 ml salt 90 ml sunflower or canola oil 250 ml warm water (hotter than lukewarm) For the veggie wraps: 15 ml olive oil 500 g veggies of your choice (florets of broccoli & cauliflower and corn work nice) 1 red pepper, diced 1 large clove garlic, finely chopped 5 ml dried chilli flakes 1 packet creamy-garlic sauce power 300 ml milk 6 prepared flour tortillas 250 ml cheddar cheese, grated 250 ml thick sour cream 400 ml avocado dip (guacamole) 4 whole spring onions, coarsely chopped DirectionsFor the tortillas:Combine all the ingredients and by hand, stir-and-knead just until you have a smooth dough. Roll the dough into a ball. (You can prepare this in advance and let it sit at room temperature for a couple of hours, covered with cling film.) To cook your tortillas, heat a non-stick frying pan or griddle over medium-high heat. While this is happening, nip a piece of dough the size of a chicken egg off the big ball of dough. Pat the small piece of dough into a thin, round tortilla or take a wine bottle or rolling pin and roll out thinly. Cook the tortilla until there are little brown specks on both sides like you would see on those tortillas in store costing R59.99. Continue rolling out your tortillas and cooking them (keep the others warm) until you have used up all the dough. Easy, delicious, flaky tortillas for a fraction of the cost of bought ones and delivering a fortune of taste over those stale, months-old flour ‘cloths’ in a packet! For the veggie wraps: Heat the oil in a pan or wok and add the vegetables and red pepper. Toss until piping hot. Add the garlic and chilli flakes and stir well. Whisk together the sauce powder and milk and add to the vegetables. Stir until thickened and remove from heat. Heat the tortillas or wraps in a pan or microwave. Allow each person to fold their own: upon each wrap, place a portion of vegetables, followed by a portion of each of the rest of the ingredients. Fold or roll up, and enjoy!
