Carrot Cake recipe
A Weigh Less alternative to traditional carrot cake recipes

Ingredients

6 egg whites
1 1/3 cups Weigh-Less Spoon for Spoon Sugar Replacement
1 cup applesauce (apple puree)
125ml skim milk
10ml vanilla essence
1/4 tsp ground cloves
1/2 tsp ground nutmeg
1 tbsp cinnamon
2 tsp baking soda
1 cup wholewheat flour
1 cup cake flour
1 tin crushed pineapple pieces (with juice)
250g grated carrots
100g walnuts
80g raisins
Weigh-Less Non-Stick Spray

Directions

Beat the egg whites well in a large mixing bowl, slowly add the sugar, followed by the apple sauce, milk and vanilla essence.

Sift together the dry ingredients and add to the egg white mixture.

Stir in the remaining ingredients one at a time.

Spoon into a loaf tin that has been coated with non-stick spray and bake at 180C for 40 minutes.

Remove from heat and leave in loaf tin for 5 minutes, turn onto a wire rack and leave to cool.
