A recipe for Mushrooms Stuffed with tuna and capers and topped with a Dijon mustard sauce.
Ingredients100g canned white tuna, packed in water, drained1/4 tsp dried dill weed 1 tbsp fresh lime juice 2 tbsp capers, drained , chopped 12 fresh mushrooms (med) , stems removed 30g parsley sprigs (optional) 30g paprika (optional) DirectionsIn small bowl combine tuna, dill, mustard, lime juice, and capers. Mash capers and mix well.Stuff mushrooms with tuna mixture. If desired, decorate caps with parsley and sprinkle paprika on top before serving. CommentsAlternatively, mushrooms can be cooked by quickly sauteing mushroom caps in 1 tablespoon oil or butter; or place finished stuffed caps on baking sheet in preheated 180C oven for 10 minutes or until hot.ServingsServes 4Recipe courtesy of Dlife - For your diabetes life. |
