Ingredients1 tbsp peanut oil3 medium garlic cloves , minced 3 chillis of your choice , minced 3 boneless skinless chicken breasts , halved, and cut into 2-inch pieces 2 tbsp low sodium chicken stock 1 small red bell pepper , sliced thin 1 small green bell pepper , sliced thin 1 cup fresh chopped celery , sliced 1/2 cup chopped scallions , sliced 1 tbsp light soy sauce DirectionsIn a wok, heat oil over medium-high. Add garlic and chili peppers and saute 30 seconds.Add chicken and saute 5 to 8 minutes; chicken should no longer be translucent. Move chicken up to edges of wok. Add broth and peppers and saute 4 minutes. Add celery and scallions and saute 2 more minutes. Move chicken back to center and mix with vegetables.
