Pineapple Cake recipe
Reader submitted recipe for Pineapple Cake with cream cheese icing

Ingredients

500ml cake flour
5ml baking powder
5ml bicarbonate of soda
1ml salt
375ml white sugar
2 extra large eggs
1 can (440g) crushed pineapple
For the icing:

1 Tub cream cheese
500 ml Icing sugar
25 ml Vanilla extract
100 ml Soft butter

Directions


Preheat oven to 180C and smear 'n cake pan with butter or spray with spray&cook

Sieve cake flour, baking powder, bicarbonate of soda and salt together in a mixing bowl.

Add sugar, eggs, pineapple and mix well.

Put the mixture in the cake pan and bake for 20 - 30 minutes or until a knife comes out clean out of the centre of the cake.

Icing:
Mix all the ingredients together at once and put over the cake after it has cooled down.
