Reader submitted recipe for Pineapple Cake with cream cheese icing
Ingredients500ml cake flour5ml baking powder 5ml bicarbonate of soda 1ml salt 375ml white sugar 2 extra large eggs 1 can (440g) crushed pineapple For the icing: 1 Tub cream cheese 500 ml Icing sugar 25 ml Vanilla extract 100 ml Soft butter DirectionsPreheat oven to 180C and smear 'n cake pan with butter or spray with spray&cook Sieve cake flour, baking powder, bicarbonate of soda and salt together in a mixing bowl. Add sugar, eggs, pineapple and mix well. Put the mixture in the cake pan and bake for 20 - 30 minutes or until a knife comes out clean out of the centre of the cake. Icing: Mix all the ingredients together at once and put over the cake after it has cooled down. By: Natasha Jooste
