Diabetic friendly recipe for oven baked raisin and cinnamon french toast. Makes a sweet breakfast treat!
Ingredients1 cooking spray2 piece sliced whole wheat bread 4 eggs 3 tbsp cold water 1 tsp ground cinnamon 1 tbsp Raisins, golden, seedless 1/8 tsp salt 1/2 tsp SPLENDA No Calorie Sweetener, granulated 4 cup boiling water DirectionsPreheat oven to 450F/230C. Coat small oven-safe baking dish with cooking spray.Boil 4 cups of water. Tear bread into large pieces and place in bottom of baking dish. In mixing bowl, whisk egg, 3 tablespoons cold water, ground cinnamon, raisins, salt, and sweetener. Drizzle over bread. Set the baking dish in center of larger oven-safe pan. Add boiling water to outer pan until half full. Bake 10 to 12 minutes or until slightly brown. Let cool completely before serving.
