Those of us who are carb conscious will love this recipe for Lemon and Tomato Sole Fillets.
Ingredients230g sole fillet , rinse and pat dry1 pinch lemon pepper seasoning 1 small tomato , finely diced 1 tsp capers, drained , rinsed 1/4 tsp ground thyme 1/4 tsp garlic powder 1/2 tbsp fresh lemon juice 1 medium lemons , thinly sliced (for garnish, optional) DirectionsPreheat broiler.Season fillets with lemon pepper seasoning. Place in baking dish. In small bowl, mix tomato, capers, thyme, garlic powder, and lemon juice. Pour juice mixture evenly over the fillets. Cook for about 5 to 6 minutes, without turning.
