Cordon Bleu recipe
Recipe for Cordon Bleu - crispy chicken rolled around ham and swiss cheese.

Ingredients

6 boneless skinless chicken breasts
100g shredded Swiss cheese
60g sliced, smoked ham
1 cup white whole wheat flour
2 egg whites , beaten
1/3 cup bread crumbs
cooking spray

Directions

Preheat oven to 180C.

Pound chicken breasts with flat side of meat mallet, until very thin and even in thickness.

Layer ham and cheese on chicken breasts, cutting to fit.

Roll pieces of chicken and secure with toothpicks.

Dredge chicken rolls through flour, dip in egg whites. Coat with bread crumbs.

Coat rolls generously with cooking spray. and cook in skillet over medium heat until browned on all sides, 8 to 10 minutes.

Place rolls in medium skillet over medium heat. Cook 8-10 minutes, turning as necessary, until brown on all sides.

Remove chicken from skillet to baking pan.

Bake, uncovered, 30 minutes, until thoroughly cooked
