A dairy-free recipe for Oatmeal Raisin cookies.
Ingredients1/2 cup vegetable shortening or butter, softened3/4 cup brown sugar 1 egg 1tsp vanilla extract 1 cup flour 1/2 tsp baking powder 1tsp cinnamon 1/4tsp salt 2 cups rolled oats 1 cup raisins DirectionsPre-heat your oven to 180C and line a baking tray with baking paper.In a mixing bowl, cream together the shortening/butter, sugar, egg and vanilla until pale and fluffy. Sift together the flour, baking powder, cinnamon and salt in a separate bowl and slowly incorporate into the sugar mixture. Add the oats and the raisins and mix well. Place spoonfuls of the mixture onto the baking tray, approximately 2-3cm apart, and bake for 10-15 minutes until the biscuits begin to brown at the bottom. They're still going to be slightly squidgy but they will dry when cool. If you want a chewier biscuit, only bake for 10 minutes. Allow to cool and store in an air-tight container for up to 2 weeks.
