A healthy and low carb Omelette recipe, which is made with egg whites and flour. Flavoursome and great for those wanting to lose a few kg's for summer.
Ingredients2 eggs/egg substitute2 tbsp whole milk 1 1/2 tsp fresh dill, minced 1/8 tsp black pepper 4 egg whites 1 tbsp white all purpose flour 1 cooking spray 1/2 cup Sprouts, alfalfa, fresh 1 medium tomatoes , thinly sliced 1 1/2 tbsp grated Parmesan cheese DirectionsIn a medium bowl, whisk whole eggs/egg substitute, milk, dill, and pepper. Set aside.With electric hand mixer, beat egg whites at high speed until soft peaks form. Add flour. Continue beating until stiff peaks form. Fold egg white mixture into egg/egg substitute mixture. Coat a small nonstick skillet with cooking spray, heat over medium. Pour half of egg mixture into skillet, spreading evenly. Cover and cook for 5 minutes or until center is set. Arrange half of sprouts, tomato, and cheese on half of omelet. Loosen omelet with a spatula, and fold in half. Slide omelet onto serving plate. Repeat last steps with remaining ingredients to make second omelet.
