Low carb recipe for Sesame Chicken Salad, with baby corn and a tangy citrus dressing.
Ingredients2 cup prepared roasted chicken , with out skin280 grams mixed salad greens 250 grams baby corn , drained and halved crosswise 2 fresh green onions , sliced 1/4 cup Radishes, fresh, slices 1/3 cup orange juice 1/4 cup rice vinegar (or white vinegar) 1/2 tsp toasted sesame oil 1/4 tsp black pepper 1 1/2 tsp sesame seeds 1 pinch Radishes, fresh, slices , shredded (optional) 1 medium oranges , cut into wedges (optional) DirectionsCombine the chicken, salad greens, baby corn, green onions, and radishes in a large salad bowl.For dressing, combine the orange juice, vinegar, oil, and pepper in a screw top jar. Cover and shake well. Refrigerate for up to 3 days and shake before using dressing. To serve, pour dressing over salad mixture, tossing lightly to coat. Transfer to individual bowls. Sprinkle each serving with sesame seeds and add finely shredded radish and orange slices if desired.
