Quick and simple recipe for Honey (or syrup) Cake with a hint of lemon. A light and fluffy dessert, served with cream or custard.
IngredientsCake Mix:1 cup Flour 1/2 cup Sugar 4 tsp Baking Powder 1/4 tsp Salt 1/2 cup Milk 3 tbsp Butter 1 Egg Cake Topping: 3 tbsp Honey (or syrup) 1 1/2 tbsp Butter 1 tbsp Lemon Juice DirectionsSift together the flour, sugar, baking powder and salt.Heat the milk and butter in a small saucepan until lukewarm, beat in the egg & add to the sifted dry ingredients, blending well. Turn the batter into a greased, round pie dish or cake tin (approx 21 cm/9 inch in size) & bake at 180C/350F/Gas Mark 4 for 15 to 20 minutes until a skewer inserted in the middle comes out clean. Place the honey, butter and lemon juice into a small saucepan and melt together over a gentle heat. Pour over the hot cake as soon as it comes out of the oven.
