Low carb recipe for Spicy Asian Chicken Kabobs - you can make these to serve as party snacks, or as a more substantial meal.
Ingredients2 boneless skinless chicken breasts1 small green bell pepper (or red) 24 Mushrooms, fresh, small 1/2 cup orange juice 2 tbsp low sodium soy sauce 1 tbsp vegetable oil 1 1/2 tsp onion powder 1/2 tsp Chinese 5-spice powder 24 wooden skewers DirectionsNote: This recipe must marinate for 4-24 hours.Cut chicken and pepper into 24 square pieces. Place chicken, pepper, and mushrooms in a large resealable plastic food storage bag. In a small bowl, whisk orange juice, soy sauce, oil, onion powder, and five spice powder. Pour marinade into plastic bag, securely close bag, and turn bag around to coat chicken. Marinate chicken mixture in the refrigerator for 4 to 24 hours making sure to turn frequently. Soak 24 wooden skewers for 20 minutes in water. Preheat broiler/grill while skewers are soaking.and Coat broiler pan with nonstick cooking spray. Drain and reserve marinade in small saucepan. Bring reserved marinade to boil. Arrange one piece of chicken, pepper, and mushrooms on each skewer. Place skewers on the prepared broiler pan and brush the skewers with the boiled marinade. Discard any remaining marinade. Place pan 4" from heat inside an oven set to grill. Grill skewers until the chicken is no longer pink in the center (be careful it doesn't burn). Serve.
